Raised in Caracas, Venezuela, Great Waters Brewing Company Executive Chef Ernesto Figuera got his start in cooking early and honest. Growing up he watched his parents and grandmother make Pabellon, Hallaca, Hervido and Chivo al coco; he was captivated by what could be done in the kitchen.
Deciding he wanted to experiment himself, he tried his touch at a few dishes and his love of cuisine deepened. Working in a variety of restaurants and eateries while attending Central University of Venezuela, Figuera decided to make the move to America and pursue his passion.
A position at Kramer’s Catering Company led him to the kitchen at Great Waters Brewing Company fourteen years ago. Now as the Executive Chef he supervises 15 employees.
Naming his parents and grandmother as his mentors, Figuera continues to please the clientele with dishes such as Pollo Caracas Sauce and Spiced Shrimp.
